My homemade lemon curd

The lemon curd is the first English recipe I tested, even before living in the UK because I just love it! I must admit I am not a big fan of English desserts in general (sorry!) but there are some exceptions and the lemon curd is definitely one of them!

Lemon curd recipe:

The lemon curd is said to have been born in England in the 19th century. For the little anecdote, I learned how to prepare it during a cooking class in a restaurant in Provence ;-). Overall, I like all lemon desserts. No doubt that my Sicilian origins have influenced my strong taste for this citrus fruit!

Really very simple! For a bowl of lemon curd, you need:

1 lemon (its juice and zest)
75g of sugar
2 egg yolks
50g of butter

Put all the ingredients (except the butter) in a small saucepan and cook them in a bain-marie, stirring with a wooden spatula. When it becomes pasty and homogeneous, add the butter and stir for another 10 minutes over a low heat. Never stop turning. As soon as it looks like lemon curd, it’s ready! Leave to cool and keep in a cool place.

I like lemon curd with shortbread cookies, in plain yogurt, just on bread or spread on scones. If you are making muffins, you can also put a spoonful in the middle of the muffin (fill the pan with half of the dough, put a small spoonful of lemon curd and then pour the other half of the dough before putting it in the oven).
